There is a lot of work on documenting Pynta internal API or writting tutorials on how to use Pynta.
Hint: Look for "doc" label in project bugtracker.

There is example_project in the Pynta project tree. But to know Pynta better you should try to make simple blog or other basic website. It is very easy and shouldn't take much time.
